Born and Bread named stand-out bakery at Bread Show

THE quality at the Toowoomba Bread Show just continues to rise.

Chief steward Paul Brosnan said entries for the 2014 show were up by 100, and the entries had shown strong improvement.

The Toowoomba Showgrounds was a hothouse of activity on Friday as judged cut up and combed through the 625 loaves, cakes, pies and lamingtons.

Mr Brosnan said the Glenvale Room provided one of the best bread judging facilities in Australia.

"It's because of how much natural light there is.

"It helps with visualizing and looking at the different characteristics in the bread - the texture and the look."

Mr Brosnan said the judges were looking for bread with an appealing texture, smell and even look - but he's clear on what makes a bad loaf.

"In commercial loaves, what we like is that it's not squashed, it's not half the size it should be.

"And that there's no holes in it - there's nothing worse than going home to make a sandwich and finding you can't put anything between it."

Toowoomba bake shop Born and Bread Bakery was the stand-out performer of the show, taking out the King of the Bakers award.

It was also named the best regional bread exhibitor and took home the regional shield for best baker on the Darling Downs for the eighth year running.

Westbrook's On The Rise Bakery was named best cake exhibitor.

Deb's Bakery from Toowoomba won the champion loaf of the show with a 1.8kg white married loaf - in layman's terms, two loaves of bread joined together.
