Holiday leftovers put to good use

CHRISTMAS indulgences may have left many of us feeling a little bit over it this week, but there is a fair chance that, once you freshen up, you will probably be ready to finish off any leftover food in your fridge.

So what to do with it?

Websites such as taste.com.au and leftoverchef.com offer a range of recipes, which you can search through according to what ingredients you have to use up.

Casseroles can be a good way of throwing everything in and seeing what it gets you. Usually it will result in a pleasant, post-Christmas meal with little effort and big results - enough to keep kids fed and adults dozing off for at least another day.

The adventurous may even try working out their own proportions, throwing in leftover cooked pasta or rice, according to what looks right, along with chopped or frozen vegies, a chopped onion, minced garlic, leeks and a couple of tablespoons each of butter, flour, milk, sharp grated cheese, perhaps curry powder, a dash of leftover wine (if there is any such thing) and your favourite seasoning.

Dump the pasta and/or rice in a baking dish, along with meat and vegetables.

Saute the onions and garlic in the butter (perhaps use extra butter if needed) making it into a sauce with the cheese and pour over the casserole for baking.
