Hardest thing about opening a restaurant? Managing people and opening night. It's hard to plan for opening night. Things just go wrong.

What went wrong? The order dockets went through to the kitchen in Spanish. Luckily one of the chefs could stand in and translate for the others all night.

Have you enjoyed the process? Absolutely. It's been fun. lovely people and we've had good community support.

Favourite ingredient in the kitchen? Bravas sauce (spicy tomato sauce)

Best dish on the menu? Patates Bravas (chat potato with bravas sauce) and Setas Rellenas (stuffed mushroom with ricotta cheese)

Beer or wine? Both but we're BYO at the moment. James Squire 150 Lashes and Oyster Bay pinot noir go well with tapas.

Where do you buy your produce? We get the best from the region. Everything is locally sourced.
