Barbecue on the go serves up meat treats

IF AMERICAN-style slow-barbecued smoked meats make your mouth water, a new Bundaberg business should hit the spot.

Paul Durston owns 4670 BBQ, a portable slow cooking barbecue for events and catering.

"We cook with wood and charcoal to get the smoke flavour," Mr Durston said.

"I've been into cooking American-style barbecue for some time and competed in a number of competitions and did quite well."

Mr Durston said cooking the meat slowly over a low temperature helped break it down while infusing it with flavour.

"It's cooked very slowly and at low temperatures," he said.

"It started in America with the lower cuts of meat that took longer to cook -ribs, brisket etc."

Mr Durston said he would debut his business at this Friday's MEAT at RiverFeast event.

"We do everything from festivals to events and we will be at RiverFeast this week," he said.
